Meal Planning — Week starting February 10, 2013

Last week’s lasagna provided more meals than I anticipated, so I really don’t need to cook many new meals this coming week. I’ll report on the Baked Shrimp Sofrito and the Caribbean-Spiced Mango Chicken (Monday night’s menu).

My chest freezer is full to over-flowing, so I think I’d better apply myself in the day’s ahead to eating up the extra portions I’ve ‘put down’ in recent weeks.

That said, I’ve acquired (yet another) new cookbook — Fine Cooking’s Make it Tonight: 150 Quick & Delicious Weeknight Recipes [The Taunton Press, 2012]. I’ll be trying the Sweet Potato, Ham & Goat Cheese Salad.

The baking bug hit during last week’s “Snowmageddon.” We got off rather lightly here in Canada’s Capital(e) . . . only about 8 inches of snow fell on Friday. That’s a fairly regular winter storm for us.  Hoping everyone south and east of here in the super storm’s clutches make a fast and safe recovery.
